PB Stuffed Blueberry Slap! Muffins
I did a little experiment with my Slap Jack! pancake mix….
My good friend Rebekah inspired me to un-Jack my Slap Jacks! and make some muffins. They definitely didn’t suck, at all. Don’t know what Slap Jacks! is? Slap Jacks! is a do-it-all pancake mix. Seriously. Here’s proof. And the best part? If you just wanna make pancakes (or waffles), all you do is add water to the mix and griddle ’em up.
Anyways, back to my muffin woman duties. Keep in mind that a lot of the ingredients can be easily subbed to your preference, too. If you don’t have yogurt, double the pumpkin. If you don’t have pumpkin, double the yogurt, stuff them with something other than peanut butter, etc. GET WILD.
What you need:
2 scoops Slap Jacks (any flavor) OR Slap! Nutrition whey (any flavor)
1/4 cup oat flour
1/4 cup powdered peanut butter
1/4 cup vanilla Greek yogurt
1/4 cup ???? pumpkin
1/3 cup coconut sugar or sweetener of choice
2 tbsp milk of choice
1 tsp baking powder
1 tsp baking soda
1/4 cup creamy peanut butter (I used Nut Butter Nation salted caramel flavor)
What to do:
Preheat oven to 350 degrees; grease muffin tin or baking cups.
Blend all ingredients except blueberries and peanut butter until smooth and gently fold in blueberries.
Fill muffin cups a little less than half full with batter and scoop a spoonful of peanut butter on top of each; continue to fill with batter after peanut butter is dolloped until each section is 3/4 full.
Bake for 15-18 mins or until toothpick comes out clean. Keep an eye on these suckers, don’t burn your muffins. That would be sad. There’s no crying in muffin making.
