There’s really not much better than a big, fat, fluffy stack of pancakes. Even better when the fluff includes a dose of protein and doesn’t have the chew feel of the tire on a Mack truck. These pair perfectly with a pool of maple syrup, bacon and eggs. Enjoy my go-to protein pancake recipe featuring my favorite protein powder from Slap! Nutrition.
Ingredients:
1/4 cup coconut flour
1 scoop @slapnutrition whey
1/4 tsp baking powder
3 eggs
1 tbsp coconut oil
1/4 cup milk to thin
1-2 tbsp maple syrup or honey
Dash cinnamon and salt
Directions:
Cook in greased griddle over medium heat and flip when raw side begins to bubble (about 1 min) and cook til both sides are golden brown. Slap into your face and enjoy. Or you could just get a tub of Slap Jacks! and just add water to that mix and make life a lot easier and your kitchen a lot less messy. But sometimes it’s satisfying to throw things around like you’re in the orangutan cage at the zoo. Feel free to add any mix-ins or toppings of your liking! Enjoy!
