Protein Banana Bread

I remember when I was growing up one of my favorite things to have for breakfast was a slice of warm banana bread. Not the kind made from scratch, nope. The kind you make from a boxed mix. Maybe it was Pillsbury…I can’t quite remember. I did love the dough boy, though. Nothing wrong with the from-scratch version at all, but I think my tastebuds hadn’t hit puberty yet. All I know is that it was delicious and even better warmed up with a smidgen of butter.

These days I have a different palate and prefer different things to suit my dietary needs. That’s not to say I don’t occasionally indulge in the real deal. But this recipe makes a nice little substitute if you want something gluten free and higher in protein.

Give it a whirl and let me know what you think. Peanut butter (or some kind of creamy spread) on top is NOT optional. Just so you know.

You will need:

3-4 overripe bananas (depending on size)

1/2 cup Slap Nutrition Vanilla Frosting OR Slappy Birthday Cake Whey Protein Powder

3/4 cup gluten free oat flour

1/2 cup plain or vanilla Greek yogurt (if using flavored Greek yogurt, reduce sweetener)

2 whole eggs

1/4 cup honey or sweetener to taste

1 tsp baking soda

dash salt

dash cinnamon (optional)

 

What to do:

Preheat oven to 375 degrees. Melt/mash bananas and blend all liquid ingredients. Mix together Slap Whey Protein Powder, oat flour, baking soda, salt and optional cinnamon. Gently fold dry ingredients into wet mixture until well mixed. Add additional mix-ins (nuts, chocolate chips, raisins aka the herpes of the baking world, etc.). Pour into greased loaf pan (you may need more than one depending on size) or muffin tins. Bake for 20-25 mins or until toothpick comes out clean and top is a golden brown. Enjoy warm or slice up and pack for a quick snack!

  1. Love this recipe! I need to buy some bananas and LF Greek yogurt this weekend and then this is a must! So easy too! And I agree, nut butter on top is never optional – always a must 🙂
